UNOX:
1. Spray and line rectangular frittata tray (what
size) with greaseproof paper.
Ingredients:
2. Place pumpkin in tray, spray with oil and cook
Qty Ingredients on pumpkin setting in UNOX.
3. Half way through pumpkin cooking cycle, add
750g Diced pumpkin
zucchini and spray. Finish cooking cycle.
400g Diced Zucchini
4. Remove from oven and cool, then evenly
200g Diced Roast Capsicum spread capsicum and feta across the tray.
5. Mix eggs, cream, stock and pepper in a bowl.
150g Cubed Feta
6. Quickly whisk through flour, careful to not over
9 Eggs whisk, and pour evenly over
vegetables/cheese.

7. Bake in UNOX on “Frittata” setting.
¼ Cup Self Raising Flour 8. Cool.

Teaspoon Vegetable Stock Powder TO PORTION & PACKAGE:
¼ Teaspoon Cracked Pepper
Cut into 9 equal portions (3 x 3) – score first using
1/8 Bunch Parsley scoring roller or measure using ruler dividing length
and width equally by 3.
Serving Size: 45
Shelf Life: 5 days Serve in 500mL Genfac Containers.
Freezable: Y/N Garnish with a generous sprig of flat leaf parsley.
